Tombstone Cookies
Get your hands on these scrumptious cookies which will leave you wanting more!
Serves: 20 people
Prep time: Approx 1 hour
Cook & chill time: Approx 1 hour each

Ingredients:
Softened butter (6 tbsp)
1 large egg
Cocoa nibs (2 tbsp)
Sugar (1/2 cup & extra for sprinkling)
Vanilla (1/2 tsp)
Salt (1/4 tsp)
All-purpose flour (1 1/3 cups)
Baking powder (1/2 tsp)
Melted semi sweet chocolate
Instructions:
- Heat oven to 400 degrees.
- Whirl coca nibs into the size of a grain of rice.
- Beat butter and ½ cup of sugar in a large bowl with an electric mixer.
- Add the vanilla and egg to the bowl and mix again.
- In a different bowl, whisk baking powder, cocoa nibs, salt and flour.
- Then gradually add the butter to the second bowl and blend till the mixture is doughy.
- Divide dough into thirds.
- Cover each portion with plastic wrap and put in fridge for 1 hour.
- Flour a board and roll out the dough one portion at a time to 1/8 inches thick.
- Cut out tombstone shape with a sharp knife.
- Place on ungreased baking sheets slightly apart from each other.
- Bake cookie until lightly brown (10 minutes)
- Take out of oven and cool.
- Pipe ‘RIP’ with melted chocolate.
- Push these into your chocolate dessert pots and enjoy!
Marshmallow Ghosts
These crunchy and creamy marshmallow ghosts will definitely get your mouth watering!
Serves: 18 people
Prep time: 40 mins
Cook time: 10 mins

Ingredients:
Unsalted butter (100g & extra to grease tin)
Pink & white marshmallows (300g)
Melted white chocolate (300g)
Rice Krispies (200g)
Wooden lolly sticks
Melted milk chocolate or icing for decoration
Instructions:
- Line and butter a baking tin.
- Melt the butter in a pan.
- Add the marshmallows and stir gently until they all have melted.
- Stir in Rice Krispies and stir until they are all coated.
- Spoon the mixture into the greased tin and press to make sure it is all flat.
- Chill until it has set.
- Cut the Rice Krispies into rectangles, then with a sharp knife round off tops and make the bottoms jagged like the in the image.
- Carefully push a lolly stick into the bottom of each ghost.
- Spoon melted white chocolate over each ghost and leave to set.
- Decorate with milk chocolate or icing and leave to set again.
